During Chinese New Year, Mum will cook chicken curry and we will have it for breakfast with bread and sometimes even for lunch and by the 2nd day, we will have finished the whole pot of curry.

My mum used to cook chicken curry for CNY too, but after a while she was sort of influenced by the chicken seller that it is rather pantang to cook chicken curry for CNY (apparently its a common food during the 'white' events!). sigh... wish my mum wasn't so pantang... :(
Your mum's version is interesting! Carrots... Does it make it sweeter? Must ask my mum to try one day. heehee... :)

Yes, carrots do add sweetness to the curry
