Baking butter cakes

I have started baking recently.

Last Fri, it was banana butter cake based on Mom's recipe. I was very happy that it turned out yummy. Even mom said it's nicer than her version.


On Sun, I baked another version of choc chip in half of the cake and banana slices in the other half. It turned out drier but still tasted not bad.


This afternoon, I baked a coffee version with chocolate chips since Dad likes that flavour. I was a bit disappointed tasting it just now. It has less kick as compared to the earlier ones. Sis, Mom and I think it may taste better with ice cream.


Oh well, maybe I should just stick to baking banana cake the next time.

Here's the recipe:

8oz (250g) butter - softened
8oz (250g) brown sugar (to reduce to 6 oz if you are including banana or choc chip)
3 eggs
8oz (250g) self raising flour (weight also include 2 tablespoon of milk powder) - sift flour
Pinch of baking soda
3 mashed bananas (medium size) - For banana cake
3 teaspoons of coffee - for coffee cake
1 cup of Hershey's semisweet choc chip - advisable for coffee cake

Steps:
1. Mix butter and sugar until the sugar is well blended into the butter
2. Beat in eggs. Mixture will look curdled intially. Mix well until it looks smooth like cream.
3. Fold in flour and baking powder until well mixed.
4. Include banana/coffee/choc chip and pour into baking tray.
5. Bake at preheated oven at 190 degree celsius for 45min to an hour until the skewer in the centre of the cake comes out clean.
