I tried making vegetable stock on Sunday, but I didn't let it simmer more than 30mins, so the veggies weren't tender. I also find broccoli to be quite strong smelling, and will use it for stir frying. With the stock and cooker veggies, I was able to churn out my lunch (kimchi salad and miso soup) and dinner (vegetable soup to go with the not so nice roast chicken drumstick from the nearby coffeeshop). Love the colours and knowing that I was eating healthy stuff :)
